Almond meal banana muffins!!! Yes, we'll reach the recipe, but 1st, hi and how was your weekend? Within Chicago it had been a beautiful 60 degrees (in February!). Of course, I took complete benefit of the weekend by firmly taking a break from function and fees. On Friday night we stayed in, produced cookies and viewed the brand new(er) Steve Jobs movie. I full blown LOVED it and thought Michael Fassbender was great. In the event that you haven't noticed it yet, you need to! Saturday morning arrived early as my kitty Milly wakes me personally up daily around 5am. I did so manage to fall asleep for a couple more hours after that decided to hit a pig feet good for skin work out. The fitness studio room is approximately 1.5 miles away, but I always walk because I can and honestly, I love walking EVERYWHERE. Yesterday I walked almost 25,000 steps - pretty proud of myself for that certain. On my way to my workout, I loved one of the lovely banana muffins. I produced them a few weeks ago and also have been tweaking the formula every week since. Truthfully, I test my meals about 5 or 6 times before they finally find yourself on the blog. What can I say? I'm a perfectionist, especially when it comes to muffins. These muffins are MAGICAL. Made with almond food and flaxseed food for incredible nutrition, vitamins and minerals. They're also normally sweetened with bananas no extra sugar. Unless you count the chocolates, which individually I don't. The advantages of chocolates are completely underrated; you may already know, I'm quite the advocate of placing it in baked goods and consuming it alone like a heart-healthy treat. It isn't the chocolate that is the issue, it is the amount of sugar in the chocolate. If you are having these like a breakfast time muffin, it is possible to replace the dark chocolate with blueberries, or simply leave it out and pass on them with jelly or nut butter. Or simply go all in and enjoy a little delicious chocolate each day because #treatyoself. I hope you might have the very best week. I'll be back soon with more nutritious goodies. xo! 5.0 from 3 reviews Calories from fat: 218 Fat: 16.7g Prep period: 10 mins Cook time: 20 mins Total time: 30 mins Ingredients 1/4 cup flaxseed meal 1 teaspoon baking soda 2 medium extra ripe bananas (about 3/4 cup mashed banana) 1 egg, slightly beaten 1 tablespoon melted coconut oil (avocado or olive oil also functions) 1 tablespoon apple cider vinegar 1 teaspoon vanilla extract 2 tablespoons unsweetened almond milk 2.5 oz 72% dark chocolate bar, cut (use vegan chocolate, if desired) Instructions Preheat oven to 350 degrees F. To create vegan: I haven't tested this, but I suppose you could omit the egg and use 1/3 cup flaxseed food and 1/4 cup almond milk. Please let me know if you try it! If you wish to replace the chocolates chunks with chocolate chips you can. I recommend a little over 1/3 cup chocolates chips If you'd like a little more proteins in these muffins, I like adding 1/3 glass of protein powder. I've just examined it with Aloha's Vanilla Proteins Powder. Feel absolve to add walnuts or pecans. I produced your coconut flour chocolates chip banana breads 2 weeks ago and today I am simply waiting for my bananas to dark brown so I could make more! Do you think area of the almond meal in this may be subbed out with oat flour? Last time, I actually didn't have sufficient almond flour (I had been a 1/2 cup brief). THEREFORE I utilized 1/2 glass of coconut flour and added a supplementary egg. OMG!!! They came out amazing!!!!!
